New Wave Spinach Salad

Turn over a new leaf and incorporate a few more fruits and vegetables
into your diet. This salad is a great place to start - full of greens,
kiwi, oranges and dried cranberries, eating better never tasted so good!

New Wave Spinach Salad
from Campbell's Kitchen

Prep Time: 10 min.

1/2 cup canola oil
1/4 cup lemon juice
2 tablespoons honey
1 teaspoon Dijon-style mustard
2 cloves garlic, minced
1 teaspoon ground black pepper
3 cups loosely packed fresh spinach leaves
3 cups loosely packed red leaf lettuce leaves
2 ripe kiwi fruit, peeled and sliced
1 can (11 ounces) Mandarin orange segments, drained
1/2 cup dried cranberries
1 large red onion, thinly sliced (about 1 cup)
6 ounces goat cheese, cut into 6 (1/2-inch-thick) rounds

1. Beat the oil, lemon juice, honey, mustard, garlic and black pepper in
a small bowl with a fork or whisk.

2. Place the spinach and lettuce into a large bowl. Add the dressing
and toss to coat. Divide the greens among *6* plates and top with the
kiwi, oranges, cranberries and red onion. Top *each* with *1 round*
goat cheese.
Makes: 6 servings (about 1 1/2 cups greens and 1 cheese round each).

Kitchen Clip
                              For extra crunch and flavor, toast some sliced almonds, pumpkin
seeds or pecan halves in a small skillet to sprinkle on the salad before
serving.
