This fantastic dinner idea has something to please everyone...it's a
little sweet, and a little spicy...with a whole lot of great taste!
Pace Chicken with Pineapple Mango Salsa
from Campbell's Kitchen
Prep Time: 5 min. Cook Time: 25 min.
4 skinless, boneless chicken breasts halves
1 tbsp. ground cumin
1 tbsp. olive oil
1 jar (16 ounces) Pace(R) Pineapple Mango Chipotle Salsa
Directions:
Season the chicken with the cumin.
Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken
and cook for 10 minutes or until it's well browned on both sides.
Pour 1 cup salsa over the chicken. Reduce the heat to low. Cover and
cook for 15 minutes or until the chicken is cooked though. Serve with
the remaining salsa. Serves 4.
Kitchen Clip:
Serve with prepared cornbread and some sautéed mixed bell peppers.
