There's nothing better on a windy March day than a bowl of hearty beef
stew to chase the chill away!
Swanson Hearty Beef Stew
from Campbell's Kitchen
Prep Time: 10 min. Cook Time: 2 hr. 10 min.
1 lb. beef for stew, cut into 1" pieces
2 tbsp. all-purpose flour
Vegetable cooking spray
1 bay leaf
1/2 tsp. dried thyme leaves, crushed
1/8 tsp. ground black pepper
1 3/4 cups Swanson(R) Beef Broth
2 cups whole baby carrots
2 medium potatoes, each cut into 6 wedges
Directions:
COAT beef with 1 tbsp. flour. Spray saucepot with vegetable cooking
spray. Add beef and cook until browned.
ADD remaining flour, bay leaf, thyme, pepper and broth. Heat to a boil.
Cover and cook over low heat 1 1/2 hr.
ADD carrots and potatoes. Cover and cook over low heat 30 min. or until
done. Discard bay leaf. Serves 4.

Lower Sodium or Certified Organic Beef Broth in place of the regular
beef broth.
Kitchen Clip:
The beef will be easier to cut if you freeze it for about 1/2 hour
before cutting.
