Pace Triple Pepper Papaya Shrimp Salad
from Campbell's Kitchen
Prep Time: 15 min.
1 cup Pace(R) Triple Pepper Salsa
1 papaya, peeled, seeded and diced
1 lb. peeled cooked large shrimp
1 cup whole kernel corn
4 green onions, chopped (about 1/2 cup)
1 tbsp. lemon or lime juice
Mixed salad greens
Directions:
Combine the shrimp, papaya, corn and onions in a large bowl. Add the
salsa and lemon juice and toss to coat.
Serve the shrimp mixture over the salad greens.
Kitchen Clip:
To peel and seed a papaya, remove the peel with a sharp paring knife or
vegetable peeler. Cut the papaya in half lengthwise. Use a spoon to
scoop out all the seeds from the center of the fruit. Then slice the
papaya halves according to the thickness you desire.
