that's fast, flavorful and fabulous!
Cheddar Broccoli Frittata
from Campbell's Kitchen
Prep Time: 10 min. - Cook Time: 15 min.
6 eggs, beaten
1 can (10 3/4 oz.) Campbell's(R) Condensed Broccoli Cheese Soup or 98%
Fat Free Broccoli Cheese Soup
1/4 cup milk
1/8 tsp. ground black pepper
1 tbsp. butter OR margarine
2 cups sliced mushrooms (about 6 oz.)
1 large onion, chopped (about 1 cup)
1 small zucchini, sliced (about 1 cup)
1/4 cup shredded Cheddar cheese (1 oz.)
1 green onion, chopped (about 2 tbsp.)
Directions:
MIX eggs, soup, milk and black pepper.
HEAT butter in large ovenproof nonstick skillet over medium heat. Add
mushrooms, onion and zucchini and cook until tender. Add soup mixture.
Cook over medium-low heat 8 min. or until eggs are set but still moist.
SPRINKLE cheese over egg mixture.
BROIL 4" from heat 2 min. or until golden brown. Sprinkle with green
onion. Cut into wedges. Serves 4.
TIP: To make skillet ovenproof, wrap handle in aluminum foil.
Kitchen Clip:
Serve with mixed salad greens topped with a bottled light vinaigrette.
Fresh fruit for dessert rounds out the meal.
