Hearty Mixed Bean Stew with Sausage

Using the slow cooker to prepare this warm and earthy stew gives you a
chance to relax and enjoy the day.

Hearty Mixed Bean Stew with Sausage
from Campbell's Kitchen

Prep Time: 15 min. - Cook Time: About 9 hr.

3/4 lb. sweet Italian pork sausage, casing removed
10 cups Swanson(R) Chicken Broth (regular, Natural Goodness(TM) or
Certified Organic)
1/4 tsp. ground black pepper
2 medium carrots, chopped (about 2/3 cup)
1 stalk celery, chopped (about 1/2 cup)
4 oz. dried pinto beans (about 3/4 cup)
4 oz. dried navy beans (about 3/4 cup)
4 oz. dried kidney beans (about 3/4 cup)
6 sun-dried tomatoes in oil, drained and thinly sliced (about 1/4 cup)
 Grated Parmesan cheese

Directions:
 COOK sausage in medium skillet over medium-high heat until sausage is
browned, stirring to separate meat. Place in 5- to 5 1/2-qt. slow cooker.
 ADD broth, black pepper, carrots, celery and pinto, navy and kidney beans.
 COVER and cook on LOW for 7 to 8 hr.*.
 STIR in tomatoes. Cover and cook for 1 hr. or until beans are tender.
Serve with cheese. Serves 8.
 TIP: *Or on HIGH 4 to 4 1/2 hr.

Kitchen Clip:
Round out the meal by serving the stew over piping hot white rice.
