Hearty, delicious and quick to dish up: Supper tonight's a winner!

Roasted Red Pepper, Baby Spinach & Goat Cheese Sandwiches
from Campbell's Kitchen

Prep Time: 10 min.

2 cups baby spinach leaves
3 tbsp. fat-free raspberry vinaigrette OR your favorite fat-free vinaigrette
4 slices Pepperidge Farm&#174; German Dark Wheat Natural Whole Grain Bread
2 roasted red peppers, cut into strips
1 oz. goat cheese OR blue cheese, crumbled
2 tbsp. thinly-sliced green onions

Directions:
 TOSS spinach and vinaigrette in bowl. Arrange spinach mixture on 2
slices bread.
 TOP with red peppers, cheese, green onions and remaining bread. Serves 2.
