This simplified version of the classic Italian salad is perfect for
lunch or as a side dish at dinner.
Tuscan Bread Salad
from Campbell's Kitchen
Prep Time: 10 min.
1/4 cup prepared fat free red wine vinaigrette
1 cup Pepperidge Farm® Whole Grain Seasoned Croutons
2 tomatoes, seeded and diced
1/2 cup cubed fresh mozzarella cheese
2 green onions, thinly sliced
6 fresh basil leaves, cut into thin strips or torn into small pieces
Directions:
POUR vinaigrette into medium bowl. Add croutons and toss until evenly
coated.
ADD tomatoes, mozzarella, green onions and basil to croutons. Toss
until evenly coated. Divide between 2 bowls or plates. Serves 2.
