Dijon-Herb Pork Roast

Why Wednesday? Celebrate the week's being half over with an easy roast tonight.

Dijon-Herb Pork Roast
from Campbell's Kitchen

Prep Time: 10 min. - Cook Time: 1 hr. 45 min.

1 tsp. minced fresh rosemary OR 1/4 tsp. dried rosemary leaves, crushed
1 tsp. minced fresh parsley OR 1/4 tsp. dried parsley flakes
1 tsp. minced fresh thyme OR 1/4 tsp. dried thyme leaves, crushed
2 1/2- to 3-lb. boneless pork loin roast
1/2 cup red currant jelly
1/4 cup Dijon-style mustard
1 tbsp. cornstarch
1 cup Swanson(R) Chicken Broth OR Natural Goodness&#8482; Chicken Broth
1/2 cup fresh whole-wheat bread crumbs
Vegetable cooking spray

Directions:
MIX rosemary, parsley and thyme. Cut small slits into surface of roast
and stuff herb mixture into slits. Place in roasting pan. Roast at
325°F. for 1 hr.
MIX jelly, mustard, cornstarch and broth in saucepan. Cook and stir
until mixture boils and thickens. Spoon about 1/4 cup broth mixture
over roast. Sprinkle with bread crumbs and spray with vegetable
cooking spray.
ROAST 45 min. or until done. Let stand 10 min. Serve with remaining
broth mixture. Serves 8.
