Cajun Chicken Fettuccine
from Campbell's Kitchen
Prep Time: 10 min. - Cook Time: 25 min.
2 tbsp. all-purpose flour
2 cups V8(R) 100% Vegetable Juice *
1 tsp. Cajun seasoning
2 tbsp. vegetable oil
4 boneless chicken breast halves
1 large green pepper, chopped
1 medium onion, chopped
4 cups hot cooked fettuccine, cooked without salt
Directions:
MIX flour, vegetable juice and Cajun seasoning.
HEAT half the oil in skillet. Add chicken and cook until browned.
Remove chicken.
HEAT remaining oil. Add pepper and onion and cook until tender-crisp.
ADD flour mixture. Cook and stir until mixture boils and thickens.
Return chicken to skillet. Cover and cook 5 min. or until done. Serve
with fettuccine.
Serves 4.
