Italian Sausage & Lentil Stew

Autumn activities and a chill in the air call for a hearty supper tonight.

Italian Sausage & Lentil Stew
from Campbell's Kitchen

Prep Time: 15 min. - Cook Time: 55 min.

1 lb. sweet Italian sausage, cut into chunks
1 large onion, chopped
2 large carrots, sliced
2 cloves garlic, minced
2 cans (14 oz. each ) Swanson(R) Vegetable Broth
2 cups cut-up red potatoes
1/2 cup dry lentils
1 bay leaf
2 tsp. dried oregano leaves, crushed OR 2 tbsp. fresh oregano, chopped
2 cups coarsely chopped broccoli rabe

Directions:
SPRAY saucepot with vegetable cooking spray. Add sausage and cook until browned.
ADD onion, carrots and garlic and cook until tender.
ADD broth, potatoes, lentils, bay leaf and oregano. Heat to a boil.
Cover and cook over low heat 40 min. or until lentils are done.
STIR in broccoli rabe and cook 5 min. Remove bay leaf. Serves 8.

Kitchen Clip:
Any extra stew keeps well refrigerated for a couple of days. Reheat
and send in an insulated thermos for a quick heart-warming lunch.
