This spicy and savory beef mixture stuffed into tender peppers creates
tempting aromas, bringing the family to the table in record time.
Picadillo Stuffed Pepper Casserole
from Campbell's Kitchen
Prep Time: 20 min. - Cook Time: 30 min.
1 lb. ground beef
1/8 tsp. garlic powder OR 1 clove garlic, minced
1 can (about 14 1/2 oz.) stewed tomatoes
1/2 cup Pace(R) Picante Sauce
1 tsp. ground cumin
1/4 tsp. ground cinnamon
1/3 cup raisins
1/3 cup toasted slivered almonds
2 medium green peppers, seeded and cut into lengthwise quarters
1/2 cup shredded Cheddar cheese
Fresh basil leaves
Directions:
COOK beef and garlic in skillet until browned.
ADD tomatoes, picante sauce, cumin, cinnamon, raisins and almonds.
Heat through.
ARRANGE peppers in 2-qt. casserole. Spoon beef mixture over peppers.
Cover.
BAKE at 400°F. for 25 min. or until peppers are tender. Uncover. Top
with cheese. Bake 5 min. or until cheese melts. Garnish with basil.
Serves 4.
To toast almonds, arrange almonds in single layer in shallow-sided
baking pan. Bake at 350°F. for 10 min. or until lightly browned.
Kitchen Clip:
Make a salad of sliced cucumbers and diced tomatoes, tossed with a
vinaigrette, to serve with these spicy stuffed peppers. Heat a loaf of
Italian bread to complete the menu. Make ice cream sundaes for dessert.
