Homestyle Beef Stew
from Campbell's Kitchen
Prep Time: 10 min. - Cook Time: 2 hr.
1 lb. beef for stew, cut into 1" pieces
2 tbsp. all-purpose flour
Vegetable cooking spray
1 bay leaf
1/2 tsp. dried thyme leaves, crushed
1/8 tsp. pepper
1 can (14 oz.) Swanson(R) Beef Broth (1 3/4 cups)
2 cups baby carrots
2 medium potatoes, each cut into 6 wedges
Directions:
COAT beef with 1 tbsp. flour. Spray saucepot with vegetable cooking
spray. Add beef and cook until browned.
ADD remaining flour, bay leaf, thyme, pepper and broth. Heat to a
boil. Cover and cook over low heat 1 1/2 hr.
ADD carrots and potatoes. Cover and cook over low heat 30 min. or
until done. Discard bay leaf. Serves 4.
Kitchen Clip:
Serve a loaf of crusty French bread and tossed a green salad to go with
this hearty stew. Apple pie or strudel for dessert tops it all off.
