Kitchen Clip:
Prosciutto is Italian ham that is seasoned, cured with salt, air-dried
and pressed into a dense, firm texture. Unlike familiar aged or picnic
hams it is not smoked. Italian prosciutto varieties are customarily
named for their originating region in Italy, including Parma ham,
considered true prosciutto.
