Earthy barley and mushroom soup simmers while you relax! This hearty
supper soup is made perfect with the addition of Campbell's(R) Cream of
Mushroom Soup.

Creamy Mushroom Barley Soup
from Campbell's Kitchen

Prep Time: 5 min. - Cook Time: 50 min.

2 tbsp. butter OR margarine
1 cup sliced mushrooms
1 medium onion, chopped
1/3 cup uncooked barley
1 can (26 oz.) Campbell's(R) Cream of Mushroom OR 98% Fat Free Cream of
Mushroom Soup
3 cups water
1/4 tsp. dried thyme leaves, crushed
1/4 tsp. pepper
  Chopped fresh parsley

Directions:
  MELT butter in saucepan. Add mushrooms and onion and cook until
tender. Add barley and cook until lightly browned.
  ADD soup, water, thyme and pepper. Heat to a boil. Cover and cook over
low heat 40 min. or until barley is done. Garnish with parsley. Serves 6.

Kitchen Clip:
Fresh mushrooms contain a lot of water, which they release when sautéed.
They also easily absorb water, keeping them plump and intact in a soup
like this. However, since they do absorb water so easily, don't wash
them under running water--simply brush any soil away with a soft brush
before sautéing.
