Homemade chicken enchiladas are easier than ever with Campbell's(R)
Cheddar Cheese Soup in the mix. Here it provides flavor and cooking ease
for a magnificent Mexican-style meal!

Cheesy Chicken Enchiladas
from Campbell's Kitchen

Prep Time 15 min. Cook Time 25 min.

1 can Campbell's(R) Cheddar Cheese Soup
1/2 cup milk
2 cups chopped cooked chicken
3/4 cup Pace(R) Picante Sauce
1 tsp. chili powder
8 flour tortillas (8'')
  Chopped tomato

Directions:
  MIX soup and milk.
  MIX 2 tbsp . soup mixture, chicken, picante sauce and chili powder.
  SPREAD 1/2 cup soup mixture in 3-qt. shallow baking dish. Spoon about
1/4 cup chicken mixture on each tortilla. Roll tortilla around filling
and place seam-side down in baking dish. Top with remaining soup
mixture. Cover .
  BAKE at 350 degrees F. for 25 min. or until hot. Garnish with tomato.
Serves 4.

Kitchen Clip:
For the 2 cups chopped cooked chicken called for in this recipe, cube 1
lb. boneless chicken breasts or thighs and cook in a medium saucepan
over medium heat in 4 cups boiling water for 5 min. or until chicken is
no longer pink. Drain chicken, cool slightly and chop with a sharp knife
on a smooth cutting surface.
