Kitchen Clip:
Though rice is classified according to size, size is not all that
differentiates types of rice. Long-grain rice, familiar to most Western
and Indian cuisines and the type called for in this recipe, has long,
slender grains that cook up fluffy and firm. Short-grain rice, most
often found in Asian recipes, has fat, almost round grains with a high
starch content, making it sticky when cooked and easy to eat with
chopsticks. Medium-grain rice is between the two in size and
character--shorter than long grain and less starchy than short grain. It
is the type of rice most commonly processed to make cold cereals.
