It's a fiesta of fabulous flavor and easy meal-making when two favorites
from the Campbell's(R) family come together in a Mexican-style casserole.
Fiesta Chicken & Rice Bake
from Campbell's Kitchen
Prep Time 5 min. Cook Time 45 min.
1 can (10 3/4 oz.) Campbell's(R) Cream of Chicken OR 98% Fat Free Cream
of Chicken Soup
1 cup Pace(R) Chunky Salsa OR Picante Sauce
1/2 cup water
1 cup whole kernel corn
3/4 cup uncooked regular long-grain white rice
4 boneless chicken breast halves
Paprika
1/2 cup shredded Cheddar cheese
Directions:
MIX soup, salsa, water, corn and rice in 2-qt. shallow baking dish.
Top with chicken and sprinkle with paprika. Cover.
BAKE at 375 degrees F. for 45 min. or until done. Sprinkle with
cheese. Serves 4.
Kitchen Clip:
Save prep time by using packaged shredded Cheddar cheese for this
recipe. You will need only 1/4 of an 8-oz. package for the 1/2 cup
called for, so look for cheese in resealable packaging to store for
future use.
