Kitchen Clip:
Did you know that shrimp is the most popular shellfish in the U.S.? A
pound should yield 30 to 35 medium shrimp or 20 to 30 large shrimp.
Fresh shrimp should ideally be eaten within 24 hours of purchase. Select
firm shrimp with a mild scent; avoid any with a strong aroma or those
that appear opaque. Fresh shrimp (versus defrosted shrimp) will seem
almost translucent.
