Kitchen Clip:
Stir-frying is an Asian cooking technique. Bite-size pieces of food are
quickly cooked in a small
amount of oil over high heat. Although a wok is the perfect pan for
stir-frying because it exposes
the food to a maximum cooking surface, any large skillet will work as
long as it provides adequate
room to quickly stir and toss ingredients as they fry.
