Vegetables get a basting of spicy flavor and grilling ease, thanks to
creative outdoor cooking with Pace Picante Sauce.
Grilled Vegetable Sandwiches
from Campbell's Kitchen
Prep/Cook Time 25 min.
1/2 cup Pace(R) Picante Sauce
1/4 cup red wine vinegar
1 tsp. dried oregano leaves, crushed
1/4 tsp. garlic powder OR 2cloves garlic, minced
2 portobello mushrooms
1 small eggplant, sliced lengthwise 1/2" thick
2 zucchini, sliced lengthwise
1 large green OR red pepper, cut into halves
4 long sandwich rolls, split and toasted
1/2 cup shredded mozzarella cheese
Directions:
MIX picante sauce, vinegar, oregano and garlic.
GRILL mushrooms, eggplant, zucchini and pepper 15 min. or until
tender, turning and brushing often with picante sauce mixture. Slice
mushrooms and pepper.
SERVE vegetables in rolls and top with cheese. Serve with additional
picante sauce. Serves 4.

Locally grown zucchini are abundant this time of year. For zucchini at
their best choose those smaller in size, with thin skins that are bright
in color and blemish-free.
