Think of this sandwich as a delicate asparagus omelet on toast.

Asparagus and Egg Sandwiches

2 Tbs (30 ml) olive oil
8 oz (225 g) asparagus, trimmed and cut into 1-inch (3 cm) pieces
4 eggs, lightly beaten
Salt and freshly ground pepper to taste
2 6-inch (15 cm) pieces of baguette, halved horizontally and toasted
2 Tbs (30 ml) chopped fresh chives

Heat the oil in a skillet over moderate heat and saute the asparagus
until tender but still firm, about 5 minutes. Add the eggs, salt, and
pepper and cook, stirring frequently, until the eggs are cooked to
your preference. Spoon the egg mixture on top of the baguettes,
sprinkle with chives, and serve open-faced.
Serves 2.
