This dish requires no more effort than a little chopping and a
little mixing with a spoon if you use frozen cooked shrimp.

Shrimp with Lemon Horseradish Sauce

1 lb (450 g) cooked, peeled shrimp
1/4 cup (60 ml) mayonnaise
2 Tbs (30 ml) prepared horseradish, or to taste
2 Tbs (30 ml) fresh lemon juice, or to taste
2 Tbs (30 ml) finely chopped fresh parsley, chives, dill, or fresh herb
of your choice
Salt and freshly ground pepper to taste

Arrange the shrimp attractively on a serving platter or individual
plates. Combine the remaining ingredients in a small bowl,
stirring to combine. Spoon over the shrimp and serve chilled.
Serves 4 to 6.
