If I told you these kale chips were the best thing since potato
chips, I think you might be disappointed when you tried them.
But if I told you they are a healthy and surprisingly tasty
alternative to potato chips, I think you might be more inclined
to make a batch and see for yourself. I hope you do.
Kale Chips
1 bunch kale (about 1 lb, 450 g)
2 Tbs (30 ml) olive oil
Grated Parmesan or Romano cheese to taste (optional)
Salt to taste
Trim the kale leaves, removing the thick stems and tearing the
leaves into bite-size pieces. Toss with the olive oil to coat lightly
but thoroughly and arrange in a single layer on baking sheets.
Sprinkle with grated cheese of desired and bake in a preheated
350F (180C) oven until the kale is crisp and slightly browned
around the edges. Sprinkle with salt while still warm and allow
to cool to room temperature.
Serves 4 to 6 as a snack.
