FOOD FUNNY
_________________________________________________
Here's a cute one from Rosemary Zwick:
Working people frequently ask retired people what they do to
make their days interesting. Well, for example, the other day
my wife and I went into town to buy milk, bread and fruit. We
were only in there for about 5 minutes. When we came out,
there was a cop writing out a parking ticket. We went up to
him and said, "Come on man, how about giving a senior citizen a break?"
He ignored us and continued writing the ticket. I called him
a moron. He glared at me and started writing another ticket
for having worn tires. So my wife called him an idiot. He finished
the second ticket and put it on the windshield with the first.
Then he started writing a third ticket. This went on for about
20 minutes. The more we abused him, the more tickets he wrote.
Personally, we didn't care. We came into town by bus. We try
to have a little fun each day now that we're retired. It's important at
our age.

TODAY'S RECIPE
__________________________________________________
This quick and easy salad is sort of an Italian coleslaw, but I
think you'll agree that the crisp prosciutto sets it apart from
any slaw you have had before.
Cabbage and Prosciutto Salad (Insalata di Prosciutto)
1 small head Savoy cabbage, cored, quartered, and thinly sliced
1/4 cup (60 ml) extra-virgin olive oil
1/2 lb (225 g) thinly sliced prosciutto, coarsely chopped
Salt and freshly ground pepper to taste
1/2 cup (125 ml) red wine vinegar
Place the shredded cabbage in a large bowl. Heat the olive oil
in a large skillet over moderate heat and fry the prosciutto until
it is crisp around the edges. Pour the oil and prosciutto over
the cabbage, add the salt, and pepper, and toss to combine.
Return the skillet to the heat, add the vinegar, swirling the pan
to deglaze it, and boil until reduced by half. Pour over the cabbage and
toss well.
Serves 6 to 8.
