This old-fashioned casserole is quick, easy, and satisfying.

Sausage and Apple Casserole

8 cups (2 L) cubed white bread, about 15 slices
1 lb (900 g) bulk pork sausage
1 onion, chopped
1 green bell pepper (capsicum) cored, seeded, and chopped
1/2 cup (125 ml) apple juice or water
2 large apples, peeled, cored, and chopped
Salt and freshly ground pepper to taste

Heat the bread cubes in a warm oven until dried, about 10
minutes. Meanwhile, brown the sausage in a skillet over
moderate heat. Add the onion and bell pepper and cook for
2 minutes. Stir in the bread cubes and remaining ingredients
until thoroughly combined. Transfer to a greased baking dish
and bake in a preheated 350F (180C) oven until the top is
golden brown, about 30 minutes.
Serves 4 to 6.
