Thanks to Anna Welander for today's food funny:

When my son was about 4 years old, we were driving down the road. I took
a drink of my coffee, and the lid came off and spilled all over me. I
mumbled a little bit, and pulled over to wipe up the mess, at which time
my son rolled his eyes, shook his finger at me, and said, "That is
exactly why you are NOT supposed to drink and drive!"

If you like mushrooms half as much as I do, then you'll love this
sandwich. Feel free to substitute fresh shiitake, oyster, or white
button mushrooms if you like.

Mushroom Supreme Sandwiches

4 Tbs (60 ml) butter
1 lb (450 g) Portobello mushrooms, sliced
1 tsp (5 ml) dried thyme
Salt and freshly ground pepper to taste
1/2 cup (125 ml) sour cream
8 - 12 slices rye bread, toasted

Heat the butter in a large skillet over moderate heat and saute the
mushrooms and thyme until all the liquid released by the mushrooms has
evaporated, 10 to 15 minutes. Season with salt and pepper and remove
from the heat. Stir in the sour cream and divide the mixture over half
the toast slices. Top with the remaining toast and serve immediately.
Serves 4 to 6.
