Here's a quick and easy solution to the leftover ham "problem."

Ham and Walnut Patties

2 cups (500 ml) ground cooked ham
1 cup (250 ml) finely chopped walnuts
1/4 cup (60 ml) dry bread crumbs
1/4 cup (60 ml) finely chopped onion
1 egg
Salt and freshly ground pepper to taste
2 Tbs (30 ml) butter or vegetable oil

Combine the ham, walnuts, bread crumbs, onion, egg, salt, and
pepper in a bowl and mix well. Form into 4 to 6 patties. Heat the
butter in a skillet over moderate heat and fry the patties until
browned on both sides.
Serves 4 to 6.
