This classic Spanish appetizer is among those rare dishes where the
total taste is greater than the sum of the parts. The salty, dry ham and
the sweet, juicy melon combine to form one of the world's great flavor
combinations.
Ham and Melon (Jamón y Melón)
1 ripe cantaloupe (muskmelon)
8-12 paper-thin slices of prosciutto ham
Freshly ground pepper to taste
Lime or lemon wedges for garnish
Cut the melon lengthwise into 4 to 6 segments. Scoop out and discard the
seeds. Cut the skin from the flesh and discard the skin. Wrap each slice
of melon with 2 or 3 slices of prosciutto. Add a grinding of pepper and
serve with lime wedges.
Serves 4 to 6.
