I like to keep some smoked salmon on hand because I never know when I'm
going to want to put some on a bagel, add some to scrambled eggs, or
make this sandwich.

Smoked Salmon Sandwiches

4 oz (110 g) cream cheese at room temperature
2 Tbs (30 ml) chopped capers
1 Tbs (15 ml) sour cream
1 Tbs (15 ml) lemon juice
1 Tbs (15 ml) chopped fresh dill
1-2 scallions (spring onions), green and white parts, finely chopped
2 rolls suitable for sandwiches, halved
4 oz (110 g) thinly sliced smoked salmon
Freshly ground pepper to taste
Lettuce leaves

Combine the cream cheese, capers, sour cream, lemon juice, dill, and
scallions in a small bowl, stirring to combine. Spread this mixture over
the bottoms of the rolls. Add the salmon, pepper, and lettuce leaves,
and top with the remaining roll halves.
Serves 2.
