Alcohol and acidic liquids are common ingredients in marinades, so what
would you call one that contained tequila, lime juice, and salt? Sounds
like a Margarita to me. Use this tangy tropical marinade to season fish, shrimp, or poultry.

Margarita Marinade

1/2 cup (125 ml) fresh lime or lemon juice
1/4 cup (60 ml) tequila
2 Tbs (30 ml) extra-virgin olive oil
1/2 tsp (2 ml) ground cumin
1/2 tsp (2 ml) chili powder
2 - 4 cloves garlic
1 jalapeņo pepper, seeded
Salt and freshly ground pepper to taste

Process all ingredients in an electric blender or food processor until
smooth. Marinate meat for 30 minutes to 2 hours before grilling.
Makes about 3/4 cup (180 ml).
