Canned hominy is available in most American supermarkets, and I think it
is often overlooked as an alternative to other starchy vegetables.

Hominy and Cheese Casserole

2 15-oz (425 g) cans hominy, drained and rinsed
4 Tbs (60 ml) butter
1 1/2 cups (375 ml) shredded Gruyere or Cheddar cheese
Salt and freshly ground pepper to taste
1/2 cup (125 ml) heavy cream or half-and-half
1/2 cup (125 ml) bread crumbs

Place a layer of hominy in a greased baking dish, dot with butter,
sprinkle with cheese, and season with salt and pepper. Repeat, ending
with a layer of hominy. Add the cream and top with the bread crumbs.
Bake in a preheated 350F (180C) oven until the cheese is melted and the
topping is golden brown, 20 to 25 minutes.
Serves 4 to 6.
