Italian home cooks don't make an antipasto part of every meal, but a
special occasion might bring forth a simple spread such as this one.

Goat Cheese and Garlic Spread (Crema Formaggio all'Aglio)

8 oz (225 g) fresh goat cheese
1 Tbs (15 ml) extra-virgin olive oil
2-3 cloves garlic, finely chopped
Salt and freshly ground pepper to taste

Combine all the ingredients in a food processor and process until
smooth. Transfer to a ramekin. Serve immediately or refrigerate and
allow to return to room temperature before serving. Serve with
breadsticks, thinly sliced and toasted bread, or raw vegetables.
 Makes about 1 cup (250 ml).
