This recipe was popular in the 1950s and '60s when frozen vegetables
were still a relatively new convenience. How can anything with bacon and
sour cream not taste good?
Lima Beans with Bacon and Sour Cream
6 slices bacon, cut into small pieces
1/2 small onion, finely chopped
2 10-oz (280 g each) packages frozen baby lima beans
1 cup (250 ml) water
Salt and freshly ground pepper to taste
1 cup (250 ml) sour cream
Chopped parsley for garnish
Cook the bacon in a saucepan over moderate heat until crisp and drain on
paper towels. Set aside. Remove all but about 2 Tbs (30 ml) of the bacon
fat and saute the onions in the same pot until tender but not brown,
about 5 minutes. Add the lima beans, water, salt, and pepper and cook
according to the package directions. Drain thoroughly and stir in the
sour cream. Garnish with the reserved bacon and chopped parsley.
Serves 4 to 6.
