The chef at a family-run restaurant had broken her leg and came into our
insurance office to file a disability claim. As I scanned the claim
form, I did a double take. Under "Reason unable to work," she wrote:
"Can't stand to cook."

TODAY'S RECIPE

Be sure to keep this sandwich in mind the next time you have leftover
turkey in the fridge.
Turkey and Orange Sandwiches
3 Tbs (45 ml) mayonnaise
1 Tbs (15 ml) Dijon mustard
1 Tbs (15 ml) grated orange zest
Salt and freshly ground pepper to taste
2 6-inch (15 cm) pieces of baguette, halved horizontally
2-4 lettuce leaves
8 oz (225 g) cooked turkey, thinly sliced
1 orange, peeled and thinly sliced
1 avocado, peeled, seeded, and thinly sliced
Combine the mayonnaise, mustard, orange zest, salt, and pepper in a
small bowl and stir to combine. Spread the mayonnaise mixture on the
bottom halves of the baguette. Top with the lettuce, sliced turkey,
orange, avocado, and the remaining bread.
Serves 2.
