This dish can be put together in the time it takes to cook the pasta, so
keep the ingredients on hand for a quick last-minute side dish.
Pasta with Basil and Walnuts
1 lb (450 g) pasta of your choice, cooked according to package
directions and drained
1 cup (250 ml) chopped fresh basil leaves
1/2 cup (125 ml) extra-virgin olive oil
1/2 cup (125 ml) chopped walnuts
1/4 cup (60 ml) chopped fresh parsley
1/4 cup (60 ml) freshly grated Parmesan cheese
2-4 cloves garlic, finely chopped
Salt and freshly ground pepper to taste
Combine all the ingredients in a bowl and toss to combine.
Serves 4 to 6.
