Alm Hill Gardens is one of the many family-owned farms that sells their
produce in Pike Place Market. Now offering over 30 crops, they began
with raspberries which continue to be one of their most popular products.
Cornish Game Hens with Raspberry Gravy
2-3 Cornish game hens
Salt and freshly ground pepper to taste
2 cups (500 ml) frozen raspberries
1/2 cup (125 ml) extra-virgin olive oil
1/4 cup (60 ml) raspberry vinegar
2 Tbs (30 ml) all-purpose flour
Season the game hens generously inside and out with salt and pepper.
Stuff the game hens with the raspberries and place on a wire rack in a
large baking dish. Whisk together the olive oil and raspberry vinegar
and brush the game hens with the mixture. Bake in a preheated 400F
(200C) oven for 10 minutes. Reduce the heat to 350F (180C) and continue
cooking, basting the hens about every 10 minutes with the olive oil
mixture and the pan juices, until the skin is crisp and the juices in
the thigh run clear when pierced, about 45 minutes. Remove the hens from
the roasting pan and set aside. Add the flour to the pan juices and stir
to remove the lumps. Cook over moderate heat, stirring to dissolve the
brown bits in the bottom of the roasting pan and adding a little water
if necessary until the gravy is the desired consistency. Adjust the
seasoning with salt and pepper. Pour the gravy into a small pitcher and
serve with the game hens.
Serves 4 to 6.
