A pastor was invited by a member of his congregation to their farm home
for dinner. They had just finished an excellent meal of chicken and
dumplings when the pastor noticed a rooster strutting through the yard.
"That's certainly a proud-looking rooster," the pastor commented.
"Yes, sir," replied the farmer. "He has reason to be proud. One of his
sons just entered the ministry!"

TODAY'S RECIPE

Many chuck wagon cooks were renowned for their biscuits, and many
variations existed. They were prepared for practically every meal and
were often served as the main dish when supplies ran low.
Baking Powder Biscuits
4 1/2 cups (1125 ml) all-purpose flour
3 tsp (15 ml) salt
2 1/4 Tbs 35 ml) baking powder
3 3/4 cups (935 ml) heavy cream, chilled
4 tsp (20 ml) sugar
Combine the flour, baking powder, sugar, and salt in a mixing bowl.
Slowly pour the cream into the center of the bowl, stirring with a
wooden spoon just until the dough comes together. Roll into a 3/4-inch
(2 cm) thick circular shape on a lightly floured surface, being careful
not to work the dough to much. Cut out biscuits with 2-inch (5 cm)
biscuit cutter by pressing cutter into the dough and then lifting it
straight out - twisting the cutter will release air in the dough causing
the biscuits to turn out flat. Place biscuits in a greased 14" Dutch
oven or on a greased baking sheet leaving 1/2" space between them. Bake
over hot coals with additional hot coals on top of the Dutch oven, or
bake in a preheated 350F (180C) oven for 15 to 20 minutes. For even
browning if cooking over hot coals, turn the oven and lid 1/4 turn in
opposite directions every 5 to 10 minutes.
Makes about 18 biscuits.
