FOOD FUNNY
__________________________________________________
This sounds like a true one, but whether it is or not, thanks to Anna
Welander for sharing it with us.
Beth Vorhees of public TV fame said her daughter, Diana, a third-grader,
was to give a demonstration speech at school. She planned to demonstrate
how to make "Flies on a Log" which consists of peanut butter spread on a
stalk of celery with raisins on it. The morning of her speech, Diana
took out everything she needed and put it on the kitchen counter, ready
to take it to school. Unfortunately, when the girl and her mother left
for school, they forgot to take the items. Diana's mother dropped her
off and went home to get the stuff. The celery was gone. The raisins
were gone. The peanut butter had been put away. "Oh," said Diana's
father. "I had that stuff for breakfast." Diana's faithful mother rushed
to gather up more ingredients and rush them to school with an apology to
the teacher and an explanation of what happened. "Gee," said Diana's
teacher, "that's a first -- 'My dad ate my homework.'"

TODAY'S RECIPE
__________________________________________________
This is my favorite dressing and is one of the items that is often found
on my family's Thanksgiving table.
Oyster Dressing
1/4 lb (110 g) butter
1 large onion, chopped
4 cups (1 L) bread crumbs
2 cups (1 pint, 500 ml) drained whole oysters
1 cup (250 ml) chopped frozen spinach, thawed and drained
1/4 cup (60 ml) chopped parsley
1/4 cup (60 ml) capers, drained
1/4 cup (60 ml) dry sherry or white wine (optional)
1 Tbs (15 ml) paprika
Salt and freshly ground pepper to taste
Melt the butter in a large pot over moderate heat. Saute the onion until
lightly browned. Remove from the heat and combine with the remaining
ingredients in a large mixing bowl, tossing gently to combine
thoroughly. Transfer to a buttered baking dish and cover with aluminum
foil. Bake in a preheated 400F (200C) oven for 20 to 30 minutes, until
heated through. Remove the foil and bake an additional 15 minutes.
Makes about 6 cups (1.5 L).
