These tasty pancakes will be a favorite of the kids at your breakfast
table, especially if you use the banana slices to make whimsical
faces in the pancakes.
Banana Pancakes
1 egg
1 1/2 cups (375 ml) buttermilk
3 Tbs (45 ml) melted butter or vegetable oil
3/4 cup (180 ml) all-purpose flour
1/3 cup (80 ml) whole-wheat flour
1 Tbs (15 ml) brown sugar
1 1/2 tsp (7 ml) baking powder
1/2 tsp (2 ml) baking soda
1/4 tsp (1 ml) salt
2 bananas, peeled and sliced
Whisk together the egg, buttermilk, and melted butter in a mixing
bowl. Add the dry ingredients and stir just until blended - a few
small lumps are okay. Pour about 1/4 cup (60 ml) batter on a
lightly greased skillet or griddle, preferably non-stick, over moderate
heat. Press a few banana slices into the batter and cook until
bubbles form on the surface of the pancakes. Flip and cook until
golden brown, 1 to 2 minutes. Makes about 12 pancakes.

Here's a hearty quiche that even real men are sure to love.
Spinach and Sausage Quiche
8 oz (225 g) bulk pork sausage
4 scallions (spring onions), green and white parts, thinly sliced
2 cloves garlic, finely chopped
6 oz (170 g) fresh spinach or frozen spinach, thawed, drained, and squeezed dry
1 1/2 cup (375 ml) shredded Monterey Jack cheese
A 9-inch (23 cm) pie shell
3 eggs
1 1/2 cups (375 ml) half-and-half or milk
Salt and freshly ground pepper to taste
1/4 cup (60 ml) freshly grated Parmesan cheese
Cook the sausage, scallions, and garlic in a skillet, stirring to break
up the sausage, until the sausage is browned and the scallions are
tender but not browned, about 10 minutes. Stir in the spinach. Sprinkle
the Monterey Jack cheese into the pie shell and add the sausage mixture.
Whisk together the eggs, half-and-half, salt, and pepper and pour over
the sausage mixture. Sprinkle with the Parmesan and bake in a preheated
350F (180C) oven until the top is golden brown and a knife inserted in
the center comes out clean, about 40 minutes. Let stand for 10 minutes
before serving. Serves 4 to 6.
