One of my daughter's wedding presents was a toaster oven. Soon after the
honeymoon, she and her husband tried it out. Almost immediately, smoke
billowed out of the toaster. "Get the owner's manual!" her husband shouted.
"I can't find it anywhere!" she cried, searching through the box.
"Oops!" came a voice from the kitchen. "Well, the toast is fine, but the
owner's manual is burnt to a crisp."

These simple yet flavorful canapes are served at many family
gatherings, especially in the spring when radishes first become
available.
Radish and Chive Canapes (Zakusky z Horodynoiu)
8 oz (225 g) farmer's cheese or cream cheese
2 Tbs (30 ml) butter
1/2 cup (125 ml) finely chopped radishes
1/2 cup (125 ml) chopped chives or the green
part of scallions (spring onions)
Salt and freshly ground pepper to taste
Thinly sliced rye or whole wheat bread
Combine the cheese, butter, radishes, chives, salt, and pepper
in a small bowl and mix until thoroughly combined. Refrigerate
covered overnight or for up to 3 days. Spread on bread and make
sandwiches and open-face sandwiches, trim the crusts, and cut
into bite-size pieces. Serves 6 to 8 as an appetizer.

Being close to the Baltic Sea, herring has been a staple of
the Ukrainian diet since ancient times. Nowadays we're lucky
that pickled herring is available almost everywhere.
Herring Spread (Oseledetsia)
2 cups (500 ml) pickled herring in wine sauce, drained and finely chopped
1 onion, finely chopped
1 apple, peeled, cored, and finely chopped
2 hard-cooked eggs, peeled
2 Tbs (30 ml) sour cream
2 Tbs (30 ml) dry bread crumbs
Salt and freshly ground pepper to taste
Thinly sliced bread or crackers
Combine the herring, onion, and apple in a bowl. Finely chop the egg
whites and add to the bowl. Mash the egg yolks and sour cream together
and add to the bowl. Add the bread crumbs, salt (careful, the herring is
already salty), and pepper and stir to combine. Refrigerate covered for
2 hours or overnight before serving with thinly sliced bread or
crackers. Serves 8 to 12 as an appetizer.
