TODAY'S RECIPE

It's really hard to put pancakes in the category of foods that are good
for you, but the whole wheat and nuts in this recipe help.
Spiced Whole Wheat Pancakes
2 cups (500 ml) whole-wheat flour
1 Tbs (15 ml) baking powder
1 tsp (5 ml) ground cinnamon
1 tsp (5 ml) ground ginger
1/4 tsp (1 ml) ground nutmeg
1/2 tsp (2 ml) salt
3 eggs
2 cups (500 ml) milk
1/4 cup (60 ml) vegetable oil
3 Tbs (45 ml) honey
1/2 cup (125 ml) chopped walnuts or pecans
Combine the flour, baking powder, spices, and salt in a mixing bowl. In
a separate bowl whisk together the eggs, milk, oil, and honey. Add to
the dry mixture and stir to combine - some lumps are okay, do not over
mix. Fold in the chopped nuts. Pour about 1/4 cup (60 ml) batter per
pancake on a heated, lightly greased griddle or large skillet over
moderate heat and cook until bubbles for on the surface, about 2
minutes. Flip and cook until golden, about 1 minute. Serve immediately
or keep warm in a warm oven.
Serves 4 to 6.
