If you insist, as I do, on toasting the New Year with a glass of
champagne, then you will appreciate this variation on a classic cocktail
from Harry's Bar in Venice.

Bellini Punch

2 fresh peaches, peeled, pitted, and quartered
2 Tbs (30 ml) sugar (optional)
1 Tbs (15 ml) lemon juice
2 bottles (750 ml each) chilled brut champagne
Frozen melon balls for garnish (optional)

Combine the peaches, optional sugar, and lemon juice in an electric
blender and puree until smooth. Pour the peach puree into a large bowl
and add the champagne, stirring gently to mix. Add optional frozen melon balls.
Serves 8 to 12.
