These old-fashioned favorites are always welcome, but don't try to make
them in hot, humid weather because they will absorb moisture from the
air and turn soggy.

Butterscotch Lace Cookies

2 1/4 cups (560 ml) rolled oats
1 1/2 cups (375 ml) packed brown sugar
1 cup (250 ml) butter, melted
3 Tbs (45 ml) all-purpose flour
1 tsp (5 ml) vanilla extract
1/2 tsp (2 ml) sugar
1 egg, lightly beaten

Combine the oats, brown sugar, and butter in a bowl and let stand at
room temperature overnight. Mix in the remaining ingredients and drop
level teaspoonfuls (5 ml) at least 2 inched (5 cm) apart on a heavily
greased baking sheet. Bake in a preheated 375 (190C) oven for 5 to 7
minutes, until brown around the edges. Cool slightly on the baking sheet
before removing to a wire rack.
Makes about 6 dozen cookies.
