The lime and chile powder in this recipe are natural complements
to their fellow Central American native, the jicama.
Jicama Salad
1 jicama, peeled and cut into thin strips (julienne)
2 cucumbers, halved, seeded, and thinly sliced
3 navel oranges, peeled, halved, and thinly sliced
1 small red onion, thinly sliced
1/3 cup (80 ml) fresh lime juice
2 tsp (10 ml) ground chile powder, preferably ancho or guajillo
Salt to taste
Chopped cilantro (coriander leaves) for garnish
Combine the jicama, cucumbers, oranges, onion, and lime juice
in a bowl, tossing to combine. Transfer to a serving platter or
individual salad plates and sprinkle with salt and chile powder.
Garnish with chopped cilantro. Serves 4 to 6.
