TODAY'S RECIPE

These savory fritters are a traditional accompaniment to sausages
and broiled lamb kidneys.
Pennsylvania Dutch Tomato Cakes
2 cups (500 ml) chopped fresh or canned tomatoes
1/2 cup (125 ml) all-purpose flour sifted with
1/2 tsp (2 ml) baking powder
Salt and freshly ground pepper to taste
Butter or bacon fat for frying
Combine the ingredients in a mixing bowl, adding just enough of the
flour mixture to form a stiff batter. Fry by tablespoonfuls in a
hot skillet lightly greased with butter or bacon fat until golden
brown on both sides. Serves 4 to 6.
