Maple syrup and walnuts is one of those flavor combinations
that can't be beat.
Maple Walnut Pie
2 Tbs (30 ml) butter
1/4 cup (60 ml) all-purpose flour
1 cup (250 ml) maple syrup
1/2 cup (125 ml) water
3/4 cup (180 ml) walnut halves or pieces
An 8- or 9-inch (20 or 23 cm) pastry pie crust
Sweetened whipped cream for garnish (optional)
Melt the butter in a small saucepan over moderate heat and stir
in the flour. Cook, stirring constantly, until the flour is light golden
brown. Add the maple syrup and water and cook, stirring constantly,
until the mixture comes to a boil. Allow to cool for 10 minutes and
stir in the walnuts. Pour into the pie shell and bake in a preheated
350F (180C) oven until the filling is set and the crust is golden
brown, 35 to 40 minutes. Cool on a wire rack and serve garnished
with whipped cream if desired. Serves 6 to 8.
