Although a bright and able man, my husband is almost completely
helpless when faced with even the simplest domestic chore.
One day, in exasperation, I pointed out to him that our friend
Betty had taught her husband Frank to cook, sew and do laundry,
and that if anything ever happened to Betty, Frank would be able
to care for himself. Then I said, "What would you do if anything
happened to me?" After considering that possibility for a moment,
my husband said happily, "I'd move in with Frank."

TODAY'S RECIPE

With the barley (a whole grain) and the walnuts ("good" fats), and
no added "bad" fats, this might be one of the healthiest dishes
you'll run across for a long time.
Walnut Barley
1-1 1/2 cups (250-375 ml) barley, rinsed and drained
1-2 ribs celery, chopped
1/2-3/4 cups (125-180 ml) chopped walnuts
Salt and freshly ground pepper to taste
Chopped parsley for garnish
Boil the barley in at least 4 cups (1 L) salted water until tender,
30 to 45 minutes. Drain and combine in a bowl with the remaining
ingredients. Serve warm, chilled, or at room temperature, garnished
with chopped parsley. Serves 4 to 6.
