Salads form a part of nearly every meal in Portugal, and they can
either be served as a first course or along with the main dish. This
classic salad is found all over the country, but is particularly popular
in the Algarve area of southern Portugal. Use only the ripest fresh
tomatoes and a fruity green Portuguese olive oil for maximum
flavor and authenticity.
Tomato Salad (Salada de Tomate)
6 ripe tomatoes, peeled, seeded, and chopped
1 medium onion, finely chopped
3 Tbs (45 ml) extra-virgin olive oil
1 Tbs (15 ml) red wine vinegar
2 tsp (10 ml) chopped fresh oregano, or 1 tsp (5 ml) dried
Salt and freshly ground pepper to taste
Combine the ingredients in a salad bowl and toss gently to
mix. Serve at room temperature. Serves 4 to 6.
