            TODAY'S RECIPE

Back in 1968 when my family returned to the US after living in
South America for five years, we had to go to Hispanic specialty
shops to find the guava paste we had learned to love. Nowadays
it's available in most American supermarkets, yet many Americans
don't know what to do with it. Here's one idea:

Guava Cake (Masa Real de Guayaba)

2 cups (500 ml) all-purpose flour
1 cup (250 ml) sugar
3 tsp (15 ml) baking powder
1 tsp (5 ml) salt
3 eggs plus 1 egg yolk
1/2 lb (225 g) butter, melted
3 Tbs (45 ml) dry sherry or water
1 1/2 lbs (675 g) guava paste, cut into 1/4-inch (5 mm) slices

Combine the dry ingredients in a mixing bowl. Add the eggs, butter,
and sherry and mix with a wooden spoon until thoroughly combined.
Place half the dough into a greased 9x12 inch (23x30 cm) baking
pan, pressing it with your fingers to make a smooth, even layer.
Top with the slices of guava paste and spread the remaining batter
over the top. Bake in a preheated 350F (180C) oven until lightly
browned, about 40 minutes. Cool to room temperature before cutting
into 2-inch (5 cm) squares. Serves 8 to 12.
